Autumn Delicacy: Savoring Fresh Pacific Saury as Sashimi

A dear friend from the Tohoku region sent us some freshly caught Pacific saury (sanma). This year’s catch was truly impressive—each fish over 30 cm long, plump and glistening with freshness. Without hesitation, we grilled them with a sprinkle of salt and squeezed fresh sudachi citrus over the top. The flavor was so exquisite, it felt like my taste buds were dancing with joy. We couldn’t help but feel deeply grateful to be Japanese in that moment.

My daughter, thrilled by the freshness, prepared the saury as sashimi. The leftovers were simmered into a savory dish, with the bones so tender they could be eaten too. The whole family raved about it!

We heard on the news that the Kuroshio Current has returned to its usual path, leading to a bountiful saury harvest this year. We can only hope we’ll be lucky enough to enjoy this incredible taste again next autumn.
