Tofu Dengaku – A Simple and Heartwarming Recipe

Drain firm tofu and cut it into pieces about 2 cm thick and roughly 3 × 6 cm in size. Lightly oil a frying pan and grill the tofu over medium heat until golden brown on both sides.

In a small bowl, mix miso, sugar, and ground sesame seeds to make the glaze. Spread the glaze on one side of the grilled tofu. Insert a skewer from the side of each piece, and gently char the glazed surface. If you have a kitchen torch, it’s quick and easy—but a toaster oven lined with aluminum foil works just as well.

For a final touch, sprinkle some extra sesame seeds or add a leaf of kinome (Japanese sansho leaf) on top. It adds a lovely seasonal aroma and a sense of tradition.
